Greek Longevity Soufliko
This is a take on a classic Ikarian dish served at almost every meal. They don’t just have a little bit of oil, they have PILES of it. Ikaria is considered one of the places around the world where people tend to live longer, healthier lives. More than twice as many Ikarians reach the age of 90 than Americans all thanks to their incredible diet. This is a perfect lunch or dinner that is so fuss free is a joke. You literally chuck everything in the pan on low, put a lid on a leave it for 30 minutes.
  • 1/2 large eggplant, cut into 2cm pieces
  • 1 onion, cut in half then sliced
  • 2 cloves garlic, sliced
  • 1 capsicum cut into 2cm pieces
  • 1 zucchini cut into 2cm pieces
  • 2 tsp sea salt
  • 1/4 cup olive oil, plus extra to serve
  • 1 tsp good quality dried oregano, or fresh if you can be bothered
  1. Layer the veggies in a large fry pan in the order listed (ie the longest veggies to cook on the bottom). Season with sea salt and pour over olive oil and oregano.
  2. Cook over low heat, covered with a lid for 20-30 minutes or until veggies are nice and soft. Serve with some spinach or rocket and anything else you want. (I added some greens, an egg and some broccoli pesto)
