One Pan Cheats Curry
I have created the ultimate cheats one-pan chicken curry which is so easy and fuss-free so you’re able to have curry legit every night. It’s the perfect combo of caramelised veggies which is great in the luteal phase of your cycle because their natural sweetness comes out which can help reduce any sugar cravings. It’s also a great meal in your menstrual phase as you tend to crave comforting meals and this is the perfect alternative to the usual curry that takes a lot of effort or is store bought and loaded with vegetable oil.   • 4 chicken thighs
  • 200g Japanese pumpkin cut into 2cm cubes
  • 1 red capsicum cut into 2cm cubes
  • 1/2 an eggplant cut into 2cm cubes
  • 1 zucchini, cut into rounds
  • 1 head of broccoli cut into florets
  • 300g button mushrooms, cut in half (or keep them whole if they are quite small)
  • 1 bunch of broccolini, woody ends removed
  • 1 brown onion, cut into wedges
  • 4 Tbsp curry powder
  • 220ml can of full-fat coconut milk
  • 1/2 cup of bone broth (can omit)
  • salt and pepper to serve
  • coriander micro herbs to serve or fresh coriander
  1. Preheat the oven to 190c. Place all the veggies in a baking dish and place the chicken on top. Sprinkle with the curry powder and cook for 25 minutes.
  2. Remove from the oven and add the coconut milk and broth and mix through the veggies. Add the broccolini and return to the oven for another 15 minutes.
  3. Season with salt and pepper and serve with some coriander micro herbs (or fresh coriander).
